Eggs glorious eggs!

Now they don’t seem all that glamorous, but eggs are in fact one of the few foods that should most definitely be classed as a ‘superfood’ and are an absolute staple in my diet.

Here’s why…

 

Alongside being a hugely versatile ingredient for cooking, eggs are a complete source of inexpensive, high quality protein, and are a rich source of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. More than half the protein of an egg is found in the egg white, which also includes vitamin B2. Egg yolks contain more calories and fat than the whites, and are a source of important fat-soluble vitamins A, D, E and K, and essential fatty acids.

 

Eggs are also a good source of vitamin D, which is essential for good bone health and more. Do shop wisely as this does depend on the method of production; try to opt for free-range, barn-raised or organic produce. I’m really lucky to have a friend who owns chickens so I know I’m getting tip-top, high quality eggs; you can also find these in supermarkets and farm shops, you just need to check the packaging for the source and method production.

 

Eggs should be included as part of a varied and balanced diet. As well as being filling, they make for a brilliant addition to breakfast as the high protein content helps us to feel fuller for longer. Paired with avocado (for healthy fats) and a slice of gluten-free toast, you have the perfect recipe to keep you full right up until lunchtime! Despite society dictating that the best breakfast options for us are the stereotypical cereals and toasts, these are in fact packed full of sugar and can lead to you feeling hungry an hour later, so an easy, tasty breakfast like the one described above is a much healthier alternative and you’ll most definitely feel better for it, I promise!
