Brilliant buckwheat pancakes

Buckwheat & cinnamon pancakes (gf, low FODMAP and great for kids)

Theses cinnamon pancakes are made with buckwheat flour and almond milk meaning they are gluten free and low FODMAP.

To make 8 pancakes you will need:

2 eggs

1 tsp vanilla extract

250ml plant-based milk

200g buckwheat flour

1 tsp ground cinnamon

1 tsp baking powder

Coconut oil

 

Optional topping:

1 cup defrosted mixed berries

Greek yoghurt

Coconut nectar

1 banana

Method:

1.       In a jug whisk the vanilla, eggs and milk together. In a separate bowl sieve the flour, cinnamon and baking powder. Slowly add the wet mix to the dry mix and combine well.

2.       Leave the mixture to rest for up to 1 hour.

3.       Heat a small pan with coconut oil and spoon in a tablespoon of the batter, leave it to cook until it is ready to turn (1-2 minutes), flip and cook for a further 1-2 minutes. Repeat until all the mixture is gone.

4.       Top with fruit, yoghurt and coconut nectar.

5.       Enjoy!
